Just wanted to say that #1 Gordon was obviously looking for something but that is because it is what he does, he is a professional chef that has been professionally critiquing others for years. Regardless of that you are the only "chef" that I have ever heard of who wouldn't use the vegetables that were in the stew, anybody and everybody knows that whatever Cooks in a stew like that soaks up all that flavor so why use some bland carrots that had no connection to the stew in the first place when you have carrots that have absorbed all the savory goodness of that stew, you mentioned in the article that they were mush but that's typical of a fair amount of vegetables that are in stews. The fact that it is "mushy" is irrelevant and quite obvious, and I believe the reason that anyone would not use the carrots that cooked with meat is only one thing, that they have got so far from real cooking into the mindset of a trained cook / chef that they have forgotten that flavor is more important than looks, yes plating makes the dish more entice but if I sat down at any restaurant and I didn't get the carrots they cooked with everything else and instead received what you put down on the plate it wouldn't matter how good the meat tasted if the vegetables didn't taste just as good and if that was the case at the very least I would never order that dish again. I would like to end this by saying I do not mean to be hateful in any way just want to give you some food for thought, and maybe help you understand that there are definite reasons why Gordon Ramsay would use the carrots despite your own opinions.
